A soft, moist quick bread filled with juicy blueberries and a creamy cheesecake-like swirl. It’s perfect for breakfast, dessert, or with coffee. ☕🫐


🧾 Ingredients

For the bread

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 1 cup fresh or frozen Blueberry

For the cream cheese filling

  • 8 oz Cream Cheese (softened)
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

  1. Preheat oven to 175 °C (350 °F). Grease a loaf pan.
  2. Mix dry ingredients: flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in eggs, vanilla, and sour cream.
  5. Gradually add dry ingredients and mix until combined.
  6. Fold in the blueberries gently.

Prepare the cream cheese layer

  1. Beat cream cheese, sugar, egg, and vanilla until smooth.

Assemble

  1. Pour half the batter into the loaf pan.
  2. Spread the cream cheese mixture on top.
  3. Add the remaining batter.
  4. Bake 50–60 minutes until a toothpick comes out mostly clean.
  5. Cool before slicing.

  • Powdered sugar dusting
  • Lemon glaze (powdered sugar + lemon juice)
