🛒 Ingredients

  • 2–3 heads of radicchio
  • 2–3 tbsp olive oil
  • Salt & black pepper
  • 1–2 tbsp balsamic vinegar
  • Optional: honey or brown sugar (for sweetness)
  • Optional: garlic, parmesan cheese, or walnuts

🔪 Steps

1. Prep

  • Preheat oven to 200°C (400°F)
  • Cut radicchio into halves or quarters, keeping the core intact so it holds together

2. Season

  • Place on a baking tray
  • Drizzle with olive oil
  • Sprinkle salt and pepper
  • Add a light drizzle of balsamic vinegar

3. Bake

  • Roast for 20–25 minutes
  • Flip halfway through
  • Leaves will soften and edges will caramelize slightly

4. Finish
