Hearty Baked Bean & Potato Casserole

Ingredients

  • 4–5 russet potatoes, thinly sliced
  • 1 can baked beans (about 15 oz / 425 g)
  • 1 onion, thinly sliced or diced – adds sweetness and depth
  • 1 cup shredded cheddar cheese – gives a creamy, savory topping
  • Optional seasonings: salt, pepper, smoked paprika, or herbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the potatoes: Wash, peel (optional), and slice them thinly.
  3. Layer the dish:
    • Spread a layer of potatoes at the bottom of a greased ceramic baking dish.
    • Pour a layer of baked beans over the potatoes.
    • Sprinkle diced onions over the beans.
    • Repeat layers until ingredients are used up.
  4. Top with cheese: Spread shredded cheddar evenly on top.
  5. Bake: Cover loosely with foil and bake 45–50 minutes. Remove foil for the last 10 minutes so the cheese melts and browns.
  6. Check doneness: Potatoes should be tender when pierced with a fork.
